Gluten-Free Pumpkin-Spice Chocolate-Chip Cottage-Cheese Pancakes

It's finally fall! I sprung out of bed yesterday to make these pancakes. They are perfect for fall, and the entire batch (serves 3) has 80 grams of protein, or about 26 grams of protein per serving. That's thanks to the cottage cheese and eggs.
Ingredients:
1 1/2 cups cottage cheese (my favorite brand is Good Culture - no weird additives or preservatives, and tastes amazing!)
4 eggs (pasture-raised and organic is always preferred!)
1 tsp vanilla
1 tbsp baking powder
1 cup gluten-free flour (I used Bob's Red Mill 1:1 Gluten-Free Flour)
2 tsp cinnamon
2 tsp pumpkin pie spice
3/4 cup dark chocolate chips (I use Lilly's baking chips)
Avocado oil, ghee, or butter for cooking
Combine all ingredients in a mixing bowl, and mix well. Heat oil/ghee/butter in a large pan, and wait for it to get hot before adding in the batter. Enjoy!!
I serve them hot with a dollop of Greek yogurt and some extra pumpkin pie spice on top!
